I’ll try to limit my picks with cards sitting in graded card collection since @qwachansey already posted one of the favourites from binder collections. 
Neo Genesis Bellossom isn’t certainly spoiled with price but it’s still really sweet card, one of the first things coming in to my mind while thinking of this set.
Special mentions goes to Expedition Pichu and Natta Wake Pikachu.

These 3 are also some of my favs as well! I have a ton of the Bellosome just because its both affordable and adorable, and I just got the Natta Wake Pikachu about a week or two ago. Awesome picks!

I cycle through my graded cards to display, but I keep these 2 on my desk permanently. I just think mew and umbreon look super nice together in the same pose like that, and umbreon reminds me of my dog waiting for me to catch up after running around in a field. And pichu, can’t get much cuter than that.

Another one which I once bought for the sole reason of being cute is the Zapdos from the Pokémon Rumble set. Just look at that little beak.
