Johto Starters featured on poster directly above Pikachu here. By the merchandise counter is a poster with Marill and another Pokemon below Marill I cannot make out… maybe Larvitar if we go off Gen 2?

That Diglett in the background is the Diglett we saw in the EX Crystal Guardians set of 2006 by the same illustrator. 
There is also a matching Hitmonchan card with Hitmonlee in the background:

@dizzylochs Yeah, Psyduck is like a mascot in cards like that. It’s also in the three Tropical Tidal Wave artworks; the six Tropical Wind artworks; and both Tropical Beach artworks.

The new Galvantula from Legendary Heartbeat has a nice hidden Butterfree!
And I spy little Wailmer and Staryu toys in Wooper’s pool!
Last one for the set that I saw. Rockruff has a Cutiefly on his leg not exactly hidden but definitely a cameo

Contains a bunch of other Pokémon that are pretty easily seen, like Politoad, Marill, Suicune, Slowking, and Bellossom, but I also noticed the mini Hoppip and Petilil inside the basked of the female Pikachu just yet.
