Omelettes are French, so I’m going to assume the Pokemon has to come from Kalos. There aren’t many egg laying options of that group, but I’ll go with Talonflame. Have to assume they’ll have a little kick to them too, no hot sauce needed.
Farfetch’d probably, or most bird eggs in general. But with a Farfetch egg you might be able to include the parent’s leek stalk / spring union to the recipe.
Then again, irl I’ve only ever tasted chicken eggs, so Blaziken would therefore be the most logical choice, being the chicken Pokémon.
I also came across some weird fan-made Fakemon when googling chicken Pokémon, but I guess the egg of an Upchucken might taste good as well.
Just have to go with Chansey

Basculegion are like the Pokemon equivalent of sturgeon, and not just any sturgeon but the Beluga sturgeon. These fish are actually huge and really old irl and they produce a black roe.
Imagine “Hisuian Black Caviar” made from Basculegion roe. Once you whoop the elite four and become champion and you’re now taking Cynthia out to celebrate and you want the pinnacle of eggs a Hisuian black caviar omelette would be it with some Champagne.
