I second a recommendation for this entire channel, lots of great Pokemon covers by an extremely skilled musician on a variety of instruments you wouldn’t believe. Carlos is a great guy in general too, I’m glad he’s had so much success with this already.

“8-bit” version of pokemon theme.
Someone who hasn’t been mentioned, Mesmonium, has tons of covers. (More than just PkMn) He’s one of my favorite music artists on youtube for his creativity and entirety of work. Also great because they’re not remixes but often entirely produced covers.
Another. though it depends on your mood, is Vanilluxe. I feel like their synthwave remixes are where they really shine, but sometimes they get some great chill, club, and other versions.
