Here is a handful of mine.
They are all from the original release. The party hat pichu was originally released as a surprise 2 day only 2k egg hatch before trading was released. Similarly the others were only a few days at the time.
Niantic is lazy and just rereleases the same exclusive stuff things. Things like party hat pichu lost all the prestige due to rereleases so i stopped grinding years ago.

I know legendary raids give you a higher chance of finding a shiny, but this one’s too good not to show off. Shundo Rayquaza!

Nothing that I would consider too rare.
Are there any normal (no costume, shadow, etc) shinies that are considered terribly rare at this point?

I remember grinding my local marsh when shiny karp first came out. I was there for hours and snagged one as I was driving out.
