I had the exact same thought.
My top three Eeveelution tails would probably be: Flareon, Espeon, Leafeon.
Also, does Jolteon even have a tail?

For Seviper, I’d say the very tip with the red blade would be its tail.
But, since it’s a snake(-Pokémon), in case you were unaware: snakes have tails as well.
To quote Google AI Overview in this case:
Yes, snakes have tails , and their tails begin at the anal vent, which is the point where the body narrows and the ribs end. Everything behind the anal vent is considered the tail, which can vary in length depending on the species and sex.
Defining the tail: The anal vent, or cloaca, marks the transition from the main body to the tail. The tail is the part of the snake that lacks ribs and vital organs like the heart and lungs.
Tail length varies: In many snakes, the tail is relatively short compared to the body. However, some species, like arboreal (tree-dwelling) snakes, have much longer tails, which can make up nearly half their total length.
Tail function: The tail is used for reproduction, and in some species, it serves other purposes. For example, the tail of a sea snake is flattened to help it swim, and some burrowing snakes may have a spiny tail tip to help them move through soil.
Distinguishing sex: The length and thickness of a snake’s tail can often be used to determine its sex; males generally have longer and thicker tails than females.

I was indeed aware what classifies a tail but was not aware of where sevipers anal vent would be, traditional position or more like a worm where it is at the end of the body. I did not remember about its tail blade.
