Eevee only getting one evolution fundamentally changes the premise of the character. So for it to get only one, that means it’s not hyper sensitive to environment anymore and its sole evolution is a normal type bigger Eevee that doesn’t exist currently.
I think Espeon would probably be the better choice, It fits better than the others if I try to imagine that Eevee only has one evolution, also it’s the only one that begins with an e.
If it has to be only one, I think Vaporeon, Jolteon or Flareon wouldn’t make much sense: why a normal cat-like pokemon, is evolving into a water/electric/fire type? Same for Glaceon or Leafeon of course. It isn’t how it normally works, although not impossible.
Espeon and Umbreon seem to make a bit more sense imho, like a cat unlocking its latent psychic/dark powers.
But I think Sylveon is just the best match, considering that fairy and normal types appear to be fairly interconnected imho.
Espeon was the first one to come to mind since it has the best design imo, my second choice was Vaporeon since that is the one I utilize in the games the most
Was coming to say this too, even though sylveon definitely isn’t my favourite it’s the only logical one hence normal and fairy being often very mixed, even in a stage where some fairy pokemon feel a bit artificial since the type change was made so much later. Sylveon also is the only single evolution where all the previous ones are one of a pair or trio so it would add the oddness to choose only one of the pair/trio
