First and second favorites I’ve posted once before.
My favorite is the MATCHPRINT Pikachu. Not only do I like the artwork, but the fact that only two copies exist in the entire world and I own one of them makes it a priced possession in my Pikachu collection for sure:
Second would be the Ghost stamp Base Set Pikachu (although these days perhaps tied with the Thin stamp Pikachu). Both really represent the uniqueness and different kind of variations possible in Base Set cards, and the Pikachu in particular. And also represent my Base Pikachu artwork variations and 1st edition stamp variations articles.

Third I don’t really know. Probably a tie between either my Art Academy Pikachus, my entire National index collection as a whole, or my PSA-10 and BGS-10 WotC #21 / Web Moltres variations (my favorite artwork of all existing Pokémon TCG cards):
