I would have loved either typhlosion or the johto starters. Hell, even the Kanto ones would have been cool too. I was never around for that era of collecting, but if there was some of those id be collecting them right now.

Shiny Ponyta as a water type would be awesome. Maybe even Kingler too as I feel he would suit the whole reaching out of the card thing gold stars have with his bigger claw.

Although Salamence would indeed also be awesome.
I also wouldn’t say no seeing a Milotic or the legendary birds as Gold Star.

Apart from Salamence I also think Tyranitar and Typhlosion would’ve been awesome, along with a lot of the legendaries that people have already suggested such as Lugia, Ho-oh, Articuno, Moltres, Zapdos etc

Salamence would definitely be cool.
For some reason a houndoom comes to mind, even though he isnt that pupular I think the card would be sick
Imagine that badass Psychic-type Ninteales with the Shining palette respectfully. Imagine the Bulba line and Exeggutor’s shine mixed with FRLG style and Jungle/ Southern Island fashion but in a autnumnal, October rustic setting. Imagine Shining Psyduck for lulz but turns out as a gem or Duskull and Dusclops before Dusknoir’s palatte turned it to shit.
Gold star Giratina or Tyrantrum would look pretty cool, I think.
Giratina is a fairly large Poké and would largely breach the frame in some areas
And Tyrantrum with it’s cobalt and silver/grey hues, would make for a great card.
