I’d bring Shuckle for a night out drinking, because his body produces juice. Free chaser, shots for everyone!

If the night starts to get too busy I’m sure bartenders would love to receive some help from Blastoise, gotta deploy that beer to thirsty customers.

Mew would actually be fun as hell to go drinking with. I can just see the chaos that would be made after and us teleporting away from the police

I wonder how big Psyduck’s psychic powers will be during his hangover the day after.
But I do agree with some of the previous comments, Slowking or Shuckle are likely the best options to drink with, and Mew the most chaotic.
This question also reminds me of that episode where the Pokémon were eating/drinking, and in some cases drunk:
