How much would you pay for a Skyridge Booster Box? With the intention of opening.
As I’m looking to buy one off this guy but would like your thoughts as I don’t want to over pay for it.
And also will these cards increase in value in the years to come? Bearing this in mind.

In theory - sealed should always price higher than the loose cards inside (not graded). Pokemon has been a very inefficient market and this has not always held true. Point being - you should lose value when you open it.
More to your point - a sealed Skyridge box will appreciate much more than an opened one.
$2,000 or so last I checked, but maybe more considering how everythimg seems to have gone up in price lately.
$3k-3.5k or so as the last few have sold north of there. Hard to make money at those prices. I would only pay ~$2k if looking to open and even then I would expecting to probably get hosed.
Now I way I bought those two cases for $3600. 
This was 2-3 years ago. There was a third case on blowout cards forever.
