How I know which set have reverses cards or not?
For example I dont know if Nobles Victories have reverse cards or not?

No need to apologize. I was trying to emphasize that there is more inforamtion out there the deeper you look. Best of luck putting your list together of your favorite species. There are some lists created already of some species

Reverses started with Legendary Collection (WOTC era) and continued onwards and into present day. Basically every set you can think of past LC has reverse holos. The only ones I can think of that don’t are Dragon Vault (BW era), Celebrations (SWSH era), pop series overall (ex-dpp), Rumble (DPP era), Trick or Trade sets (SWSH, SV), Detective Pikachu (SM era), and the various Mcdonalds sets.
For Japanese sets its a bit more complicated
